A Word from the Chef


Deeply rooted in the Seattle community, Manca's Catering has generously agreed to create a multi-course meal for this special FISW event. While we cannot dine together this year, at least we can have a night off of cooking. Always fresh, using the highest of quality ingredients, this will not be your typical delivery meal. Meals will be available for pick-up at the school the afternoon of Friday, April 30.

Diners will choose from one of the following:

Choice 1: Beef Tenderloin
Appetizers
Bacon Wrapped Dates with Gorgonzola 
Manca Crab Cakes with Lemon Aioli  
Canlis-style Salad with Romaine, Bacon, Mint, Croutons, Parmesan and Green Onion
7oz Beef Tenderloin with Salsa Verde, Coconut Basmati Rice, Green Beans
Cheese course featuring camembert, comte, and roquefort accompanied with fig preserves, fresh fruit and baguette.

Choice 2: Manca's Famous Salmon
Appetizers

Roasted Vegetable Stack of Roasted Sweet Potato, Eggplant, Zucchini, Portobello, Mozzarella and Pesto with Mashed Potatoes and Green Beans

A Word from the Sommelier


Cépaé is a direct importer of wines selected by Julien Hervet. We shared Manca's delicious menu with Cépaé, and they hand-picked three incredible wines to pair perfectly with your meal, or to sip throughout the gala evening.

White : Les Graviers, Domaine Mosny, Montlouis-sur-Loire
A very beautiful Loire Valley wine... it is all about the finesse of the Chenin Blanc! Although dry, it is a mellow and very fruity wine. The nose is fruity and floral, smooth and with just the right amount of acidity and a long finish.
 
Red: Les Charmes, Domaine Bel Avenir, Beaujolais
Dense, complex and powerful wine, which intermingles cocoa, spices, morello cherry and under wood. A molten and suave wine with a beautiful ruby robe typical of this appellation.
 
Sparkling: Champagne Or Blanc, Benoit Cocteaux
This champagne has a lively and bright color, aromas of white flowers, citrus fruit, honeysuckle and lemon, the mouth is powerful.
